Arroz con secreto de cerdo y foie

Arroz con secreto de cerdo y foie, un arroz super sabroso y contundente que como plato único es perfecto para una comida familiar.

Para preparar este arroz vamos a necesitar, para cuatro personas:

INGREDIENTES

Unos 300 g de arroz ( 4 tazas de café)

2 piezas de secreto de cerdo.

50 g de foie.

1 pimiento verde.

1 /4 de pimiento rojo.

1/4 de cebolla rallada.

1 tomate pequeño rallado.

Agua o caldo (8 tazas de café)

1 pizca de colorante amarillo.

Aceite de oliva.

Sal. 

PREPARACIÓN DEL ARROZ CON SECRETO DE CERDO Y FOIE

Para preparar este arroz con secreto de cerdo y foie empezaremos por cortar los pimientos en brunoise como lo llaman los profesionales, pero que para mí  son cuadraditos.

Rallamos la cebolla y el tomate.

Cortamos el secreto de cerdo en taquitos que quepan en la cuchara, así será muy cómodo comerlo junto con el arroz.

En una cazuela baja o una paellera ponemos un chorro de aceite de oliva y lo calentamos.

Doramos la carne para sellarla, y la reservamos a parte.

En el mismo aceite de la carne, añadimos los pimientos y dejamos que se rehoguen unos minutos.

Seguidamente añadimos la cebolla rallada y dejamos que se poche un poco.

Por último añadimos el tomate rallado y cuando esté hecho el sofrito añadiremos el foie.

Con el calor irá derritiéndose y desaparecerá.

Agregamos la carne que teníamos reservada y justo después añadimos el arroz.

Lo mezclamos todo para que se integren todos los ingredientes y vamos moviendo la mezcla para que el arroz se sofría.

Añadimos el caldo, repartimos los ingredientes para que quede liso y ya lo dejamos sin tocarlo hasta que quede seco.

Añadimos la puntita de colorante y dejamos hasta que el arroz haya absorbido todo el caldo, unos 20 minutos que es lo que tarda el arroz en hacerse a fuego medio.

Y ya está.
