ÁCIDO CÍTRICO
El ÁCIDO CÍTRICO, es un ácido orgánico presente en la mayoría de frutas, sobre todo en cítricos como el limón y la naranja.
Antiguamente se producía en Italia, utilizando el zumo del limón, pero se necesitaban cantidades ingentes de la fruta para lo que realmente se obtenía.
Tiempo después se descubrió que había unos hongos microscópicos capaces de acumular el ácido cítrico, gracias a los cuales se permitió su producción a gran escala.
Actualmente, casi todo el que se produce a nivel industrial, se obtiene del hongo Aspergillus Niger que acumula enormes cantidades de ácido y es muy fácil de producir en fermentadoras.
PROPIEDADES
El ÁCIDO CÍTRICO , tiene un sabor muy agradable y muy baja toxicidad además de propiedades por lo que se utiliza en muchísimas aplicaciones.
Es uno de los principales aditivos alimenticios y se utiliza como conservante, antioxidante, acidulante y saborizante.
Da sabor a bebidas y golosinas.
Produce efervescencias y sabor en la industria farmacéutica, además de ser un anticoagulante de la sangre.
También podemos encontrarlo en productos de limpieza como jabones.
Los principales productores de ácido cítrico en la actualidad son los EEUU, la Unión Europea y China
USOS DEL ÁCIDO CÍTRICO
Uno de sus principales usos es como conservante, disminuye el pH del producto aumentando el el tiempo de conservación y evitando que los microorganismos crezcan sobre el mismo.
Consigue que los alimentos no tomen un color pardo y conserven su color.
También es usado como saborizante, aportando su sabor ácido y potenciando otros sabores.
Su consumo está avalado por la OMS, al ser un compuesto que se encuentra en el propio organismo.
Aunque sea un producto seguro, su consumo en exceso puede dañar el esmalte de los dientes o producir molestias gastrointestinales.
USOS EN LA COCINA
El ACIDO CÍTRICO en casa lo podemos utilizar cuando cortamos frutas y verduras, espolvoreado por encima evita que se pongan negras.
También podemos añadirlo a la leche para cuajarla y elaborar quesos caseros.
Para preparar efervescencias mezclado con bicarbonato.
IMPORTANTE
Puede contener trazas de apio, mostaza, sésamo y frutos cáscara.
